Flower shiitake mushrooms, also known as donko shiitake, are grown on oak logs rather than wood chips which is a slower cultivation process that yields bigger, more flavorful mushrooms. Dried shiitake mushrooms are graded based on aroma, size, and the number of cracks or flower patterns on the cap. These mushrooms are incredibly fragrant and are used as a seasoning as much as they are eaten on their own.

To prepare these mushrooms, you can rehydrate them by soaking them in cold water for 15 minutes or until they become tender and pliable. Once rehydrated, discard the stem and use the mushroom and the reserved water to flavor soups, stir-fry dishes, or fillings for dumplings and spring rolls.

The high grade of these flower shiitakes means that each mushroom has a distinct pattern, intense fragrance, and flavor. A little goes a long way, and you may only need one or two pieces to flavor an entire dish or pot of soup.
