Shishito peppers, also known as shishitogarashi, are a variety of chili pepper originating from East Asia. They are named for their tips that look like the head of a smiling lion (shishi) and pepper (togarashi). Shishito peppers are mild and savory with a distinctive citrus-like aroma. While most shishito peppers are mild, one in ten is spicy. They are edible raw or cooked and are used as a vegetable, aromatic, and accent for a variety of Japanese dishes. They are most commonly cooked by blistering. Add shishitos to a moderate amount of oil on high heat while stirring constantly until blistered and soft. Add a generous amount of fleur de sel, pepper, and lemon juice to finish.
