Gio lua, also known as gia lua or cha lua, pork roll, or Vietnamese ham, is the most commonly eaten sausage in Vietnam. It is made by pounding pork into a fine paste, seasoning it, and then wrapping it in banana leaves before cooking it by boiling or steaming. The resulting pork product is tender and flavorful with a texture that is similar to bologna or mortadella. Cha lua goes well with almost everything. It is particularly popular in sandwiches (banh mi), rice rolls (banh cuon), and noodles (bun bo hue).
