Pacfic ocean perch, also known as the Pacific rockfish, rose fish, and akauo, is a type of perch that is prized for excellent flavor. Akauo is mild and sweet with a moderately firm, flaky flesh. It is lean yet surprisingly moist and flavorful. Smaller perch are preferred for eating due to larger fish having a coarser texture. This fish is lightly cured, seasoned with sweet potato shochu, and air-chilled to eliminate fishiness and enhance the natural flavor of the fish. It is delicious simmered, grilled, or broiled.
