Dried shiitake mushrooms add a deep richness and umami to your dishes. They are graded on aroma, size, and the number of cracks on the cap. Mushrooms with exceptional patterning are graded as flower shiitake. These mushrooms are incredibly fragrant and are used more often as a flavoring agent rather than eaten on its own.
Uses: Rehydrate the shiitake in just enough cold water to cover for 15 minutes or until tender and pliable. Discard the stem and use the mushroom and reserved water to flavor soups, stir-fry dishes, or fillings for dumplings and spring rolls.
