Hiramasa, also known as yellowtail kingfish or great amberjack, is a species of jack fish such as Japanese amberjack (hamachi). It has slightly firm, white flesh that is moderately high in fat with a mild, clean flavor that is sweet and oceanic. Our hiramasa is farmed in the cold, crystal clear waters around the Eyre Peninsula in South Australia resulting in a characteristic taste and texture that is unmatched.
These sashimi blocks (saku) are trimmed and ready for use in various raw or cooked preparations such as sashimi, sushi, or poke bowls. For best taste, we recommend eating it within 2 days or freezing it for up to two weeks.
